(Gifs are such a pain to work with on Lemmy, 480p low bitrate is the only way I can get things to consistently work smoothly on-site. Yesterday’s gif could’ve been 1080p 30 fps, but I could not get it to upload.)
The only thing I’ve been able to get to work consistently is Peertube for posts. catbox.moe works OK for comments, though if you’re doing something HD you’re going to want to convert it to webp, which some people really complain about.

Try gifski, best tool I’ve found for dealing with gifs these days and getting consistent quality with low file sizes and good compatibility
