No gold at all can be difficult. Often times the hands or the markers on the dial, some rotors …. Are made of gold even if the watch doesn’t have a gold case.

Ok plenty of Omega’s, Cartier’s, Brietlings, ICW’s made of stainless steel in that price range. Need one rec, I’d go Omega Speedmaster Professional or Cartier Santos in steel.
Going manual wind with something like the Speedmaster is a good call. Rotors are often made out of gold at this price point.
Omega has a lot of stuff in that price range. Various speedmasters, a bit below also seamaster diver 300m or aquaterra.
Maybe also check out glashütte original. Like the panomatic lunar for example.
There is a ton of stuff. So maybe be a bit more specific what style, size etc you want. Like dive watch, chronograph, calendar, moonphase, dress watch etc.
i’d say have a look into some Jaeger LeCoultre models, master compressor for example :)

If you want “exotic” materials that isn’t gold at this range, only things I can think of are titanium and carbon fiber.
