I had some giant jars of commercial salsa in the basement that were going to expire so I dumped them in the EPC with some soaked chickpeas, veggie stock and oregano.

Soup was not the goal but it was a happy accident.

Hell yeah, I call it taco soup and it’s on regular rotation in my household.
