Something that doesn’t make too much noise

Invicta vintage 37071 maybe or the escapement time King seiko homage in 35mm or the escapement time Breguet homage.
Lorus or Alba field watches are small but not necessarily minimalist in design.
Same with this citizen eco-drive bm8180 (US only link - this would be the best watch on this list).
You could take a look at my other comment too but the size might be larger on most of those.
