I have that same laptop, and it sounds perfect for what you want. Cheap, repairable, and runs linux well.
Cancelled mine recently when i saw the price almost doubled. Only still have Netflix, Dropout, and plex. Netflix is next on the chopping block.
If you haven’t heard of it, you should look up the Elan School. It’s thankfully shut down now, but I imagine there are still places just as bad.
I use an Amazfit GTR 2e, and it works almost perfectly with gadgetbridge. The only difficulty I have is i’m unable to manually update A-GPS data, so getting a GPS lock can take a while. But I don’t use it a lot, and honestly, the Fitbit Versa I came from wasn’t all that much better.
I’ve only played a couple hours so far. I just thought I hadn’t figured out how to access the maps not that they didn’t exist…

It’s been almost a year since I checked it out, but I had a lot of issues with jellyfin compared to plex. Mainly transcoding would never work, so streaming outside of my local network never worked well.
As someone who spent a lot of time learning html/css and wordpress to get a site i’m ok with, but not thrilled.
I’d say skip wordpress. I think it’s overkill for a portfolio. Mine is just a personal blog, and i’m about to sign up for the $9 a month Ghost Pro hosting with a free theme. I’m over the plugins and getting nickel and dimed for features.
Like others have mentioned, a static site generator may be good too.
Also, it isn’t open source, but i really like blot.im. I use it for Obsidian.md instead of the built-in publish because it’s a lot cheaper, and it’s close enough in appearance/quality.
EDIT: Actually, it looks like I was wrong. Blot.im appears to be open source too.
I already wanted a Steam Deck, but was saving up for one of the higher tiers. Then I found out how relatively easy it is to buy the cheap one and add an nvme drive. So, now my savings goal is a lot closer.

I’ve reached a point where if I don’t have a use for something, i’ll still try to make an unraid template if there isn’t one. Just to install it and try it out. Lol

Along with the crazy prices, there is the simplicity. No need to figure out what is streaming where. Just open plex/jellyfin and watch.
Extremely simple! It’s literally just a few screws and unplug the old one and put in the new. Took all of 10 minutes and at least half of that was trying to find my small screwdriver bits. Lol
It’s just way faster for me most of the time. I can hit F12, do what I need, and be done without messing around with a mouse or touchpad.
