Can you appeal when you think your account has been unfairly suspended. On universeodon, which recently switched to a server/admin in the UK, (and that country has become rather fascist about censoring when it comes to news about Gaza)

Yeah. this is the weakness of Mastodon. Every server has it’s own rules but if the owner does not like what you think, they will ban you. It is always better to take backups at least your followers even you can not drag your posts to the new server. And that new server must be run by you if you do not want to face any censorship. In that case, there is possibility that other instances can ban your server any time. I hope it evolves to a real decentralized network in near future like nostr.
Except that visiting Nostr is pretty much guaranteed to have nazis or nazi-adjacent memes blowing past every 5 minutes or so and there is a distinct (and extremely pleasant) lack of nazis on most Mastodon servers.
Ask the universeodon admins. They’re the ones who decide whether they want to have an appeal process or not.
