Qobuz sounds better but catalog sucks. Tidal sound quality is kind of all over the place IME but catalog is good.

the 6XX on Tubes (specifically OTL) is definitely endgame in my experience.
IMO 6x0’s are very amp dependent. Also thought they were somewhat “meh” for a while until I started going through more and more source gear and finding some great pairings.
I think a lot of people get a little disappointed when they hear the 6x0’s. I was one of them until I started going through more source gear and finding some of them really make the 6x0’s sing.
That said, all of the source gear that I really liked to pair with the 6x0’s costs at least as much as the headphones, if not many, many times more.

I’ve also not gone too deep into the cable game but have noticed differences between them. However I seldom find a cable to be categorically better.
I’ve wondered about impedance and capacitance of cables affecting sound quality, but the single crystal note was interesting. I’ve generally ignored that as far as marketing materials go.
That said, I have come across a couple of cables that sound noticeably smoother than cheap cables, wherein the cheaper/generic ones tend to almost sound grainy in comparison. I wonder if the crystal thing has anything to do with that.
IME the 6x0’s do exceptionally well on the right source gear. If you’re planning on upgrading anyway for the Sundaras, it might be worth holding on to until then to try on the new source gear.
That said, I can’t think of any amps that paired nicely with it that isn’t just as much if not more than the cost of a 6xx. I haven’t tried 6x0’s on too many things but the least expensive one I really liked was on the Jot 2’s balanced out.

I’ve experienced something similar at times. May just be crappy USB ports that’s leaking more noise than it should? Dunno.
Try turning on airplane mode, changing USB power settings, overall power settings to performance mode (or power saver mode?), etc. That’s after you make sure no other effects are being applied (e.g., make sure you’re in exclusive mode and some have said that the “disable all enhancements” setting makes a difference even in exclusive mode).
Try comparing to your phone?
IME yes. HD6x0’s in particular can do some interesting things with certain amps.
Look up the model of the keyboard they were using. Then get that keyboard.
